Both Reds are well known synergistic blends of varieties complimenting each other, and are expressing not only their specificities, but also Midalidare's winemaking philosophy.
Midalidare Premium Selection Malbec & Syrah is a blend of the bold, fruity Malbec and the fine, complex Syrah.
Syrah and Malbec vines are of French origin, at average age of 17 years. The forming is double vertical shoot positioning (VSP or double guyot). The yield is controlled and reduced. Regulation of production is twofold – green pruning and veraison pruning.
Dense ruby-red color with light purple shades. Intense fruity aromas of blackcurrant, blueberry and cherry; spices, black pepper; chocolate and smoky oak. Midalidare Premium Selection Malbec & Syrah Is fleshy, elegant and vivid full-bodied wine with velvety tannins. On the palate a cherry jam, pepper and vanilla stand out. The finish is fruity, with lingering spicy aftertaste.
The harvest for Midalidare Premium Selection Malbec & Syrah takes place in Mid-October (Syrah) and at the end of October (Malbec). Manually harvested grapes are carried out in 10-12 kg boxes.
After 24-hour cooling the grapes are carefully double sorted by hand. First the whole clusters are sorted and after being destemmed, the second sorting of the grapes is carried out. The fine selection of grapes enters by gravity into 400-litres French oak barrels or stainless fermenters whose shape resemble an open wooden vat, specially designed by Midalidare. There, at controlled temperature, cold soak takes place in order to obtain maximum coloring substance and fruity flavor from the skin. Gentle warming preceded the yeasts’ introduction and slow fermentation at controlled temperature. A major part of the blend ferments in oak and the rest – in stainless steel vats. A post maceration is carried out. Then the wine is drained from the fermenters and fed for ageing into new 225-litres French oak barrels (barrique). Malolactic fermentation takes place under controlled temperature. The wine is aged for 10 to 12 months. Rough filtration, blending and bottling follow. Midalidare Premium Selection Malbec & Syrah is not processed prior to bottling so it is possible that natural sediment could form during the bottle aging.
