Library of Varieties is, already, a part of the Wine tour at Midalidare and excites the visitors.
Samples of grape varieties had been planted there; the ones successfully cultivated for production in Mogilovo. After three years of care and perseverance, the first fruits of the love of wine and the emotion of teamwork were harvested today.
The grapes were picked early in the morning in small boxes of 10-12 kilograms and cooled in a refrigerator. After cooling, it is sorted manually on a sorting strip, removing any poor quality grains. The selected grapes enter the press, where it stays for several hours in order to allow aromas from the skin to penetrate the grape juice. The grapes are strained and delicately pressed into a stainless steel container. Currently, the containers are filled with Sauvignon Blanc grape juice and after a few days the yeasts will be introduced, and low temperature fermentation will be carried out.
