A charming French black grape variety, more popular in Uruguay than in its homeland, has found its new home among the gently rolling hills of Mogilovo village. Introducing the first vintage of Tannat - a gorgeous wine with an intense aromatic profile and exceptional aging potential.
The vines are of French origin. The orientation of rows is East-West, with southern exposure. The forming is double vertical shoot positioning (VSP or double guyot). The yield is controlled and reduced. Regulation of production is twofold - the first operation is always done when the height of the shoots is 15-20 cm. The second regulation is made when the bunches start to change colour, in the veraison period.
Vivid, opaque, dark ruby red colour with intensive purple shades. Rich, blooming on the nose with aromas of ripe black berries and cherries, black pepper and black cardamom, black plum jam, tobacco, licorice, chocolate and an elegant smoky oak. Midalidare Barrel Fermented Tannat is a full-bodied, bold wine with powerful tannins and noticeable acidity. The palate is dominated by black berries and jammy notes, spices and tobacco. The finish is fruity, with medium intensity and a spicy aftertaste.
The harvest takes place at the end of October. Manually harvested grapes are carried out in 10-12 kg boxes.
After 24-hour cooling the grapes are carefully double sorted by hand. At first the whole clusters are sorted and after being destemmed, the second sorting of the grapes is carried out. The fine selection of grapes enters by gravity into stainless fermenters whose shape resemble an open wooden vat, specially designed by Midalidare. There, at controlled temperature, cold soak takes place in order to obtain maximum coloring substance and fruity flavor from the skin. Gentle warming preceded the yeasts introduction and slow fermentation at controlled temperature. Around 30% of the blend ferments in 400-litres French oak barrels and the rest – in stainless steel vats. A post maceration is carried out. Then the wine is drained from the fermenters and fed for ageing into new 225-litres French oak barrels (barrique) from Troncais region, France. Malolactic fermentation takes place under controlled temperature. The wine is aged for at least 18 months. Rough filtration, blending and bottling follow. Bottle ageing for at least 6 months completes the process. Midalidare Barrel Fermented Tannat is not processed prior to bottling so it is possible that natural sediment could form during the bottle aging.
